Vegan Avocado Dill Potato Salad

 

2 lbs potatoes 

2 avocados

2 tablespoons lime juice

1/4 cup dill

1/2 tsp salt

1/4 teaspoon ground cayenne pepper

1 small red onion

1 tbsp dijon mustard

1 tbsp honey

1/4 tsp smoked paprika

 

This recipe is a great healthy fat & is very yummy!

A GREAT  alternative to processed mayo.

Avocado Goat Cheese Spread

 

4 oz goat cheese

1  avocado

1  garlic clove

1 tablespoon fresh lemon juice

1 tablespoon finely chopped red onion

1 – 1 1/2 teaspoons honey

1/4 teaspoon salt

1/4 teaspoon pepper

Baked Vegetarian Buffalo Cauliflower "Wings"

Buffalo Chickpea Dip

 

1 can white beans

1  chickpeas, drained and rinsed

1 cup raw cashews    

¾ cup original Frank’s Red Hot sauce       1/2 cup unflavored, unsweetened non-dairy milk       

2 teaspoons lemon juice (about ½ lemon)           

1  tablespoon nutritional yeast    

½ teaspoon onion powder             

½ teaspoon garlic powder         

Ground black pepper     

Kosher salt          

1 teaspoon fresh, finely-chopped parsley

1 teaspoon fresh chopped chives1 cup Daiya cheddar-style cheese, divided

Cashew frosting:

2 cups cashews, preferably soaked for a couple hours

1-2 tablespoon lemon juice

2 tablespoons liquid coconut oil

1/3 cup maple syrup

Water, as needed

2 large carrots, peeled

1 1/2 cups oat flour 

1 cup dates

1 cup dried pineapple 

1/2 cup dried coconut 

1/2 teaspoon cinnamon
